In true celebration of the Winter season we have
sourced some incredible truffles from the leading Southern Highlands truffiere
Tarago Truffles, for our August cooking school. We are firm believers in
celebrating the seasons and in the provenance of food and love to champion
growers who also produce sustainable food and wine.
Join our head chef Joey Ingram, as he takes you
through the demonstration process of caring for and storage of these decadent
delights. Watch how to prepare truffle infused honey, truffle veal jus and
truffle butter which you will take home after your experience.
Afterwards enjoy a five-course truffle degustation
in our award-winning hatted restaurant.

Truffled jersey milk curd – garden snow peas – crisp parmesan – parsley
Hand rolled gnocchi – spanner crab bisque – truffled mascarpone
Corn-fed chicken breast – jerusalem artichoke – shiitake butter – garden kale
Roasted Angus sirloin – smoked bone marrow – stinging nettle – young broad bean leaf – baby leek
Yacon tarte fine – porcini honey – buttermilk truffle ice cream
Due to the limited and perishable nature of truffles, we are unable to accommodate any changes to this menu.
